Food Service and Hospitality featured Lanny MacLeod (Culinary Management, April 2005; Chef Training, July 2004), executive chef at Toronto’s Victor Restaurant in Le Germain Hotel Toronto Mercer.
MacLeod explains his approach to cooking, drawing inspiration from his youth spent trying new recipes and watching Julia Child on PBS with his grandmother. He seeks to “remind people what it’s like to eat a home-cooked meal, but elevated to [incorporate] the luxe factor [of] this beautiful hotel.”
MacLeod credits his mentor, NC professor Virginia Marr, for inspiring him and setting him up with an internship at Noble Restaurant in the Prince of Wales Hotel in NOTL under Christopher Smythe. Smythe is also a part-time professor at the College who MacLeod cites as his inspiration for how to run a kitchen. He said, “you can get great work out of people [by treating them] with kindness.”
