Postmedia News: NC alumnus Drake Merritt re-releases white stout first debuted at Project Brew in 2016

A variety of local news outlets across cities and towns in Ontario ran the story, “Brews News: Deceptive white stout gets the conversation started,” about a seasonal brew by Drake Merritt, alumnus of the Brewmaster and Brewery Operations Management program (2016) that is making waves in the beer industry.

Merritt is the brewmaster and co-owner of Upper Thames Brewing in Woodstock who re-released a batch of the highly anticipated Dusk to Dawn called a “white stout.” Reporter Wayne Newton describes it as a “deceptive beer that tastes like a stout” but “looks like a blonde.”

Merritt explains that the recipe originated from his time as a brewmaster student at Niagara College. He first tested the recipe on the public during Project Brew in 2016, the College’s celebrated student-run craft beer festival.
