Niagara College is featured in The Flavour Report, highlighting the Niagara region while spotlighting the College’s Artisan Distilling program. The teaching distillery, described as “perhaps the most influential still house in the country,” gives students hands-on experience in craft distilling.
Andrea Fujarczuk, NC’s Coordinator and Professor of the Artisan Distilling program and NC alumna, is highlighted for her influential role in training the next generation of Canadian distillers.
On teaching students, Fujarczuk says,”I want them to feel confident experimenting and discovering flavours on their own.” The article highlights how her students work with local grains, unique yeast strains, and casks previously used for NC wines and beers, creating innovative spirits that reflect the region’s character.
Fujarczuk emphasizes the program’s hands-on approach: “It’s about giving them real-world skills so they’re ready to step into the industry with creativity and technical knowledge.” Under her guidance, NC has become a place where students learn the full craft of distilling, from fermentation and cask-finishing to bottling, preparing them for careers in the artisanal spirits industry.
