Niagara Now: NC professor creates Canada Day cake for annual NOTL tradition

Niagara Now covered Niagara-on-the-Lake’s annual Canada Day cake parade and celebration held at Simcoe Park on July 1.

The coverage highlights NC Baking and Pastry Arts Program Coordinator and Professor Catherine O’Donnell, owner of Willow Cakes & Pastries, whose design for this year’s Canada Day cake grew out of her work with NC, local wineries and gardens, and was built around a message about eating naturally.

The annual tradition, which dates back approximately 25 years, featured a parade of the community cake through downtown Niagara-on-the-Lake before it was served to attendees at Simcoe Park.
