Amy Proulx, PhD, Professor and Program Coordinator of NC’s Culinary Innovation and Food Technology (Co-op) program and former Canadian Food Inspection Agency inspector, was featured as a food safety expert in a Jan. 18 segment on CTV News discussing the ongoing pistachio recalls.
During the segment, Proulx explained the contamination process and outlined four key groups impacted by the recall: licensees, small family-run grocery stores, small bakeries and dessert shops, and consumers. She also addressed why the recall has taken an extended period to resolve.
