The three Niagara dailies (Niagara Falls Review, St. Catharines Standard and Welland Tribune) recently profiled NC alumna Fatima Quintero Johnson (Culinary Innovation and Food Technology and Culinary Management, 2024), who opened her own bistro, Origen Bistro Bakery, in downtown St. Catharines.
The article highlights Quintero Johnson’s inspiration for the bistro, rooted in her experience moving to Canada eight years ago and struggling to find the Colombian-style fast food she and others enjoyed. Now, she has brought those authentic Colombian flavours to Niagara with her family-run business, located at 21 Ontario St. in downtown St. Catharines.
