Dean of Business, Tourism and Environment, Al Unwin, and Brewmaster Professor, Jon Downing are quoted in the article. Downing mentions that sustainability is a big part of NC’s brewery project: “We just teach students to be good stewards, to not waste water, not create CO2 waste.”
