NC alumnus Tarun Rawat (Hospitality and Tourism Management, 2015) has opened a new restaurant in Oakville’s downtown core called Pizza Nest, which was featured by Inside Halton and the Oakville Beaver.
The fine-dining restaurant offers fine “biga” pizza dough, which the article notes is dough that has been fermented for a minimum of 54 hours – a technique used by traditional Italian breadmakers.
