Ray Spiteri from the Niagara Dailies wrote an article featuring former NC bakery and pastry arts student Christine Monfriese and her business, Monfriese Rum Cakes, which offers a variety of rum cakes, tropical mini cheesecake cupcakes, Jamaican patties, shortbread cookies and chicken pot pies.
In the article, Monfriese notes that she used to bake on the side using her mother’s recipes, but wanted to pursue owning her own bakery after working as a TTC bus driver for more than 10 years.
