CBC News published a story entitled, “From the Himalayas to central Alberta: Bentley-area farmer embraces yak, the other red meat,” in which NC’s Amy Proulx, professor and program coordinator, Culinary Innovation and Food Technology, provides her expertise on the growing demand for this game meat.
Proulx is juxtaposed with Shane Juuti, Yak farmer near the town of Bentley, Alberta, explaining that demand for Yak meat has come from high-end consumers in fine dining restaurants and traditional game meat-eaters on paleo diets. Yak meat is high in both protein and fatty acids, and a staple of northern Asian cuisine.
