Second semester Brewmaster and Brewery Operations Management students got a taste of industry during a collaborative brewing project with members of Dominion City Brewing Co.
On January 30, Dominion City brewers and NC graduates Jacinda Wade and Eric Saulis, as well as brewery owner Josh McJannet travelled from Ottawa to work with NC students to make the Dominion City Double IPA. The project gave Wade and Saulis the opportunity to return to their alma mater and share their journey from student to industry professional with current students.
“We were interested in coming down to Niagara to do a collaborative beer because we felt that it would be a good opportunity to interact with the students, and show them a different style of brewing that they might not have been able to witness yet,” said Saulis.
“It was very exciting working with the professionals from Dominion City,” said Elizabeth Beresford, a second semester Brewmaster student. “They were helpful in answering any questions we had and were kind enough to step back and give us a chance to do a lot of the physical work ourselves.”
The collaborative projects began when NC brewers reached out to industry friends to gauge the interest they might have in working with students to create a unique learning opportunity.
“We have now connected with the Student Beer Club to encourage their guests to come and brew with us and our friends to come to Beer Club for them,” said Jon Downing, Brewmaster professor.
Student Beer Club is a student-run group that invites industry professionals to meet with students, discuss career opportunities and taste samples of the latest products from the College’s Teaching Brewery. Each guest brewery that comes to Beer Club is also offered the opportunity to do a collaboration brew with the second semester class on the day they visit the campus.
The NC Teaching Brewery has hosted collaborative projects with High Road Brewing, Elora Brewing Company, Wellington Brewery, Harvest Hops and Malt, and Folly Brewing.
The double IPA, a Dominion City original recipe made by NC students, will feature as the Growler Club‘s March brew and will also be for sale in the NC Teaching Brewery and for licensees on draught.
