Description:

You will learn all about the intricacies of Icewine and the production of high sugar juice, including Botrytis affected grapes. In a project setting you will be able to produce Icewine as a final product which will be judged by a panel of your peers. You will also learn more about the basic composition of grape juice and how it relates to yeast nutritional requirements and wine quality. Wine defects will be studied and dissected for an understanding of the origins of all that detracts from the perfect wine. Other wine styles will be dealt with, and also the regulatory bodies that govern the Ontario wine industry. An assignment to design your own, will give insight as to the layout of the perfect winery.
