Description:

Food product development requires a combination of a variety of technical and creative skills to take a project from idea stage through scale up and commercialization. This capstone course will take skills developed throughout the Culinary Innovation and Food Technology Program, and combine them together into a product development project. In this course, students will develop unique food concepts, and execute the project from a technical standpoint, while the creative component will be executed in CULN 1325 Recipe Development. Student products will be pitched to industry specialists for evaluation, and students will launch the product in a consumer retail setting.
