Native plants and animals are unique to environmental conditions such as weather, geography and location, which provide a foundation of ingredients that define a national or regional cuisine. Society defines cuisine by creating unique tools and equipment, developing cooking methods, and shaping social customs. A national cuisine evolves and adapts through the travel of people and transport of ingredients, creating a 'fusion' that continually redefines global cuisines. You will cook various international dishes using a wide array of ingredients and equipment from different countries each week. This course has specific protocols regarding missed classes.
