Native plants and animals are unique to environmental conditions such as weather, geography and location, which provide a foundation of ingredients that defines a national or regional cuisine. Society defines cuisine through the creation of unique tools, equipment, cooking methods and development of social customs. Through the travel of people and transport of ingredients, a national cuisine evolves and adapts, creating a 'fusion' that continually re-defines global cuisines. You will cook a variety of international dishes utilizing a vast array of inherent ingredients and equipment from different countries each week.
