Canada is a diverse, multicultural society, with a wide variety of cultural influences. Understanding the role of culture, religion and ethnicity in food product development will open opportunities for tapping into the different cultural market segments, and bring diversity to our Canadian tables. In this class, students will gain an understanding for the culinary profiles of various global regions and cultures, and be able to adopt a broad cultural worldview into their product development. Students will gain an appreciation for religious laws, such as Kosher and Halal, and understand how to implement these practices into food processing. Students will also be exposed to successful Canadian entrepreneurs who have embraced international food processing and product styles as part of their company.
