Description:

Food additives can play an essential role in food quality, nutrition, stability, and preservation. In this course, you will gain an appreciation for the array of food additives used in the Canadian and global food processing sector, including natural and synthetic products and clean-label additives. Topics will focus on additives for nutritional benefits, changes in processing qualities, antimicrobial activity, and changes in the end product's sensory characteristics. You will be exposed to the functional ingredients industry and use standard industry databases to source additives. You will apply mathematical calculations to determine additive usage rates in food product development. You will engage in debates about the role of food additives in our processed foods sector and public perceptions about processed foods. There will be an opportunity to experiment with various additives in model food systems.
