Description:

Food additives can play an important role in food quality, nutrition, stability, and preservation. In this course, you will gain an appreciation for the array of food additives used in the Canadian food processing sector, including natural and synthetic products and clean-label additives. Topics will focus on additives for nutritional benefit, changing processing qualities, antimicrobial activity, and changing the end product's sensory characteristics. You will be exposed to the functional ingredients industry and use standard industry databases to source additives. You will gain an understanding of processing aids and their roles in food processing that are different from food additives. You will engage in debates about the role of food additives in our processed foods sector and public perceptions about processed foods. There will be an opportunity to experiment with various additives in model food systems.
