Evolving market trends require an in-depth understanding of ingredients from their source to the plate. Through our exploration, you will be able to identify and classify food commodities, while developing an overall understanding of product knowledge and specifications including the product's origin, quality, grade and government guidelines. You will examine the techniques involved in the process of preparing and cooking, contemporary plate and platter presentations and how they are applied in the food service industry today.
