This course introduces food chemistry principles, with a focus on learning to work safely in a food quality assurance or food research and development career. You will learn basic inorganic, organic and biochemistry topics specifically relating to foods. You will learn routine chemical analysis methods for quality control testing in food manufacturing and product development. You will learn health and safety practices and environmental management for chemistry lab facilities. You will debate the role of chemistry and science in the food industry. Laboratory exercises will include qualitative and quantitative food chemistry, incorporating best practices for chemical safety, and experiment management.
