This course categorizes microorganisms causing spoilage or acting as pathogens in food systems, and identifies indicator organisms within standard Canadian commodities. You will able to approach by both technology and management strategies to minimize the negative impact of microorganisms within foods. You will be exposed to regulatory systems related to microbiology, and government mandated food microbial sampling programs.
