Description:

This course teaches students key terminology and principles of beer, wine and spirits production. Students will be introduced to the various natural and human influences that determine the final style of the beverage produced. These may include raw material selection, including multiple origins and permissible ingredients; key tools, technologies and production processes; stages of maturation and interventions; and product packaging and storage considerations. An overview of key scientific principles and concepts will be provided as necessary and relevant.
