Description:

In this course you will learn about the evolution of the wine and beverage industries as well as current norms in the production and classification of beverages. You will examine the acquisition, supply, sales, storage and control systems of the industry. Evaluation of wines, beers, distilled spirits, liqueurs and mixed drinks are explored. Facility design issues and bar and beverage management from service and labour perspectives are analyzed. The scope of non-alcoholic beverage provisions and the role of cafes are also considered.. Special attention will be given to the role of wine and beverages within a hospitality operation.
