This course will address the fundamental principles of food safety and sanitation, as well as practical skills relevant to hospitality operations. Emphasis will be given to safe food and beverage management in a range of circumstances. In addition to developing an understanding of safety and sanitation within different contexts, students will explore and execute configurations and arrangements necessary within a variety of food service environments. This course is designed as an introduction to practical managerial and legal issues related to the production as well as service and delivery of food and beverage. Hands-on tasks are an integral part of this course.
