Food and Wine Synergy
The old standard of red wine with red meat and white wine with fish just doesn't do it any more. With the multitudes of cuisine crossovers, and culinary fusion available for our enjoyment we need a more contemporary approach to food and wine pairing. The good news is that the modern unifying theory (and practice) of food and wine pairing is simple as it hinges upon four basic tastes and their unique interactions. Learn the theory in class and then immediately apply that new knowledge in lab as you literally taste your way to a new and easily applied understanding.
