Brewmaster students rolled out Juno beer.

A first-term class of students from NC’s Brewmaster and Brewery Operations Management program got a chance to turn back the clock this fall to brew a commemorative beer inspired what was available to the Allied forces during the Second World War.

A modern version of Juno was brewed in late September. Brewmaster students first brewed Juno in 2019 for the 75th anniversary of D-Day and rolled it out again in time for Remembrance Day that same year.

Juno, was inspired by an English beer that helped maintain the morale of the Allied forces during the Second World War.

Brewmaster Professor Jon Downing noted that there was a restriction on alcohol level of 3% during the war. Also, with shortages and rationing at that time, there was not much malt and few hops, since warehouse of hops had been hit by bombs.

Downing said they used the same basic ingredients that were used during the war to create the modern version of Juno, but replaced sugar with more malt and increased the alcohol to modern guidelines for a pale ale at around 4.5 %. The appropriate amount of English hops were also used to balance the flavour.

Juno is available for purchase alongside other products from the Teaching Brewery, Teaching Winery and Teaching Distillery at NC’s Wine Visitor + Education Centre retail store. By November 9, there were only about 20 remaining cans of Juno available for purchase.

“It sold quickly as the students liked the history behind the beer and bought it for their families,” said Downing. “There were several shared family war stories on brew day.”
