What happens when four of Ottawa’s top chefs bring their culinary talents to Niagara College? An unforgettable dining experience for guests and an unparalleled learning experience for students.
On Saturday Jan. 31 Niagara College’s Canadian Food and Wine Institute will present the fourth installment of its 2014-2015 Chef Signature Series shining the spotlight on visiting chefs from Ottawa including Michael Blackie (Next Restaurant) Stephen La Salle (The Albion Rooms) Kyle Mortimer-Proulx (Lowerton Brewery) and Norm Aitken (new restaurant coming soon).
To be held at Benchmark Restaurant at the college’s Niagara-on-the-Lake Campus the popular event is part of the CFWI’s celebrated Chef Signature Series. The series offers guests an opportunity to savour cuisine from a variety of prominent guest chefs in a single sitting – like visiting several different restaurants at once – while giving Niagara College culinary students unparalleled industry experience on-campus.
By bringing the industry to the Canadian Food and Wine Institute the college’s culinary students will have the extraordinary opportunity to learn from some of the most prominent chefs in Niagara Canada and the United States over the span of the series.
“The opportunity to work alongside industry leaders is an essential part of our students’ development” said CFWI dean Craig Youdale. “And as these top chefs see the abilities of our students first hand they are able to spread the word to their own colleagues.”
“I’m very excited to come to Niagara and work with the students to execute this dinner” said Mortimer-Proulx. “The students will have a great opportunity to work with some different products that they might not have used much before with some modern and classic techniques.”
“I found my passion in culinary school in part due to interacting with guest chefs” added La Salle. “Ottawa’s got a great culinary scene with a lot of love passion and talent; this is a phenomenal opportunity for me to come share it with Niagara College’s students.”
The CFWI’s 2014-2015 Chef Signature Series kicked off on Nov. 12 with celebrity chef Vikram Vij continued Dec. 13 with a CFWI Christmas featuring the college’s chef professors and on Jan. 10 with Niagara region chefs. It will conclude March 21 with New. York vs. Chicago.
The Canadian Food and Wine Institute located on Niagara College’s Niagara-on-the-Lake Campus is the college’s centre for food wine and beer education. It is home to Benchmark the college’s teaching restaurant as well as the Teaching Winery and Teaching Brewery. It is also home to Junior Culinary Team Canada to represent our nation at the 2016 World Culinary Olympics.
